The wines
Our white wines
For white vinification, we follow a very simple and classic process using direct pressing (where pre-fermentation maceration is possible). The whites are aged in large containers in order to preserve freshness and carbon dioxide and avoid the woody notes that we are not looking for in our wines.
Our red wines
For red vinification, we use semi-carbonic vinification, where we work to create several superimposed layers of whole bunches and destemmed grapes. Then, after four or five days, we do a very light mini pumping-over, accompanied by a punching down of around 20 centimeters on the top of the vat. All the reds are then aged in (old) barrels.
